Here’s how to make my favorite Pickled Red Onions. ⁠

Ingredients

  • 1 Medium red onion, about 5 ounces
  • 1/2 TBSP honey
  • 1/2 Teaspoon kosher salt
  • 3/4 cup rice or white vinegar
  • clean jar or container

Optional add-ons:

  • 1-2 small garlic cloves
  • 4-5 black peppercorns
  • 4-5 all-spice berries
  • 2-4 small sprigs fresh thyme
  • Directions

Directions

Peel and thinly slice the onion into approximately 1/4-inch moons.

Whisk honey, salt, vinegar in a small bowl until dissolved. Add the onions and optional flavorings to jar and pour vinegar mixture over. Tightly seal with lid. Can be made and stored in refrigerator a day or weeks ahead.
