Here’s how to make my favorite Pickled Red Onions.
Ingredients
- 1 Medium red onion, about 5 ounces
- 1/2 TBSP honey
- 1/2 Teaspoon kosher salt
- 3/4 cup rice or white vinegar
- clean jar or container
Optional add-ons:
- 1-2 small garlic cloves
- 4-5 black peppercorns
- 4-5 all-spice berries
- 2-4 small sprigs fresh thyme

Directions
Peel and thinly slice the onion into approximately 1/4-inch moons.
Whisk honey, salt, vinegar in a small bowl until dissolved. Add the onions and optional flavorings to jar and pour vinegar mixture over. Tightly seal with lid. Can be made and stored in refrigerator a day or weeks ahead.
